Matcha is a fine powder made from premium quality green tea leaves. It is usually consumed as a beverage made from the powder suspended in hot water. Drinking this tea is an important part of the Japanese tea ceremony. Brewed matcha tea also accompanies sweets at tea shops or at home.
Before brewing matcha, the tea powder is always sifted through a fine mesh to avoid clumps in the prepared beverage.
Matcha powder itself has also long been a favorite ingredient in Japanese confections. When making confections or baked goods, even after sifting, sometimes the color of the matcha is unevenly distributed in the preparation, and lengthy cooking destroyed its pretty green color.
SEIKAYO MATCHA is revolutionary product that overcomes the problems of using matcha in blended or cooked dishes. SEIKAYO MATCHA includes a small amount of the powder of the green plant chlorella - 5% of the total mixture volume. The powdered chlorella is added to pure matcha powder.
With this addition the powder does not require sifting and it is easily folded into or mixed with any flour, starch, sugar or liquid (water, oil, eggs, cream, etc.). Furthermore, the boost from the chlorella preserves the lovely green color of matcha in baked goods.

Producer: SEIKAYO MATCHA was developed by Maruyama Nori Ten Company in Tokyo, one of the most venerable nori (laver) companies in Japan. The company was founded by Hikobei Tsushima in 1854, and is located in the heart of the Tsukiji district, just outside of the famous Tsukiji Fish Market. The company added the tea business to its line about 25 years ago. Their customers, high end sushi restaurants, began to ask if they could supply high quality tea as well as nori. Maruyama Nori Ten further expanded their line to include tea products used in baking. Maruyama Nori Ten continues to grow.
